I had some leftover squash, zuchinni and roasted corn in the fridge that I cooked two nights before. |
Add about two handfuls to the mussels after the sauce has boiled down and they have opened up. |

Stir it all up very gently and let it simmer. Add a little coconut milk or coconut water if you wish to give it a little bit of sweetness. |
Looks good, huh? Don't let it simmer too long or your zucchini will overcook and get mushy. Maybe about 10 minutes if even that long. Let it sit for a few minutes after turning the heat off. |
